Summer :

More carbohydrates, adequate protein, less fats.
More fluids including water and less semi-fluids.
Less solids, easily digestible food capable of producing
  coolant effect in the body.
  More vegetarian food, less non-vegetarian.

Monsoon/Rainy season :

Low carbohydrates, least fats, high protein.
More semi-solids, less fluids, least solids.
  Avoid non-vegetarian food.

Winter :

High protein, adequate fat, less carbohydrate.
More solids- delayed digestible for sustained release of calories.
Less fluids other than water, least semi-solids.
Food capable of producing warm effect.
More non-vegetarian food. During summer, as the day time islonger, stomach should not be empty, therefore, three or four helping of semi-solids/fluids/fruits is vey helpful. During winter, as the night time is longer, stomach should be kept full in night with such solids which are easily digestible and of high caloric value. As per Ayurveda, during night and early morning(pre-dawn) vat is high, and during day pit is increased and from evening to early night cough rises. Therefore, in the morning vatic food, in the day pittaj food and in the evening kaphaj food should be avoided. Water should be consumed at room temperature during summer and rainy seasons. During winter, water should preferably be kept at luke warm temperature all the time. Whatever the season, hot beverages having caffein should be avoided in the evening.

Incompatible Food Combinations

Avoid taking milk or yogurt with sour or citrus fruits. Avoid eating fruits together with potatoes or other starchy foods. Fructose (and other sugars) is digested quickly, whereas starch takes some time to digest. Avoid eating melons and grains together. Melons digest quickly whereas grains take more time.

Melon should be eaten alone or not at all. Honey should never be cooked. Honey digests slowly when cooked and the molecules become a non-homogenized glue that adheres to mucous membranes and clogs subtle channels, producing toxins. Uncooked honey is nectar. Cooked honey is poison. Do not eat meat protein and milk protein together. They counteract one another, disturb agni and produce ama. Milk and melons should not be eaten together.

Milk is laxative and melon is diuretic, and milk requires more time for digestion. Moreover the action of hydrochloric acid in the stomach causes milk to curdle. For this reason Ayurveda advises against taking milk with sour fruits, yogurt, sour cream, cheese, and fish. Ayurveda insists that iced water should not be drunk during or after a meal as it slows agni and digestion. Small sips of warm water taken during the meal serves to aid digestion. While eating one should properly masticate the food in order to soften it and ensure that it is thoroughly mixed with saliva. If desired, one can end a meal by drinking a cup of lassi (or takram). This can be prepared by blending four teaspoons of yogurt with two pinches of ginger and cumin powder in one cup of water.

When eating, only one third of the capacity of the stomach should be filled with food, one third with liquid and one third should be left empty. This will aid in proper digestion and promote mental clarity.
